Bowls of winter citrus continue to overflow on my kitchen counters. Since both of my children have missed a few days of school due to colds and fevers, having vitamin C at my fingertips is certainly welcomed. While I’ve been using citrus in various recipes, I knew I had to share my Citrus & Vanilla Almond Smoothie when my 5-year-old (who only likes citrus when it comes in the form of a summertime ice pop) not only liked it, but asked for more. Nobody move. He likes it. He likes it! While it’s a fun smoothie that my children enjoy, I crave it as a refreshing and nutritional start to my morning.

My Citrus & Vanilla Almond Smoothie is something I can quickly whip up at the start of a busy morning. I sip it as I get the kids up and out the door for school (sometimes taking it along with me for the drive) and it satisfies me until I can have a proper breakfast, which by that time, is usually lunch.
I used tangelos in today’s recipe, because I like their name. I’ve also used cara cara navel oranges (because I like their reddish-colored flesh) and clementines (because I like the song. Oh, my darling! Oh, my darling! Okay, okay…). There are no rules. Use whatever type of orange-y citrus you fancy.
I combine about 1 cup of freshly squeezed juice with one banana, less than half a vanilla bean (vanilla extract will work well too, just a splash) 1/2 cup of unsweetened vanilla almond milk, and toss in a handful of ice. Blend it well to combine. I use a Vitamix blender, but a standard blender would also work well.

Citrus & Vanilla Almond Smoothie
1 cup of freshly squeezed citrus juice (I used 3 tangelos)
1/2 cup unsweetened vanilla almond milk
Vanilla for flavor (I use less than half a bean or approximately 1/2 teaspoon of extract)
- Add orange juice, banana, almond milk and vanilla to blender. Add ice. Blend until smooth. Serve immediately.
Use whatever type of orange-y citrus you like!
Allergen substitution: Swap out almond milk for rice milk, coconut milk, soy milk, or hemp milk.
Omit banana and replace with greek yogurt. Or, add yogurt in addition to banana and thin out with more milk if necessary.
