Sugared Cranberries

Sugared Cranberries

Chances are that you will be raising your glass this New Year’s Eve.  Whether it’s to bid farewell to the year that was, or to toast the possibilities that a new year brings, or a little of both, you might want to consider adding a whimsical and seasonal treat to your celebration, Sugared Cranberries.

Since it’s still the holiday season, you will be sure to find whole cranberries in abundance.  If you’ve never sugared whole cranberries before, you are in for a real treat!  These look elegant, frosted-like, and when displayed in glass dishes, they are a sparkly little snack and a delicious champagne garnish, too!

These couldn’t be simpler to make. Whole organic cranberries are briefly tossed in warm simple syrup (equal parts sugar and water) then rolled in granulated sugar.  That’s it… The End!  Sugaring cranberries makes them taste just like candy, no bitter cranberries here! So not only will your champagne look festive with this garnish, but you’ll find it hard to eat just one!

Ingredients

  • 12 oz bag of whole organic cranberries, rinsed discarding any unsightly ones
  • 1 cup sugar
  • 1 cup water
  • extra sugar for rolling

Instructions

  • In a large saucepan over medium-low heat, combine 1 cup of sugar with water and cook until sugar completely dissolves.
  • Add cranberries and stir to evenly coat, remove promptly with a slotted spoon.  Do not heat too much or they will begin to burst.
  • Lay cranberries out on a baking rack to slightly dry, about 20 minutes.  They should still be sticky.
  • Working in batches, roll cranberries into a bowl of sugar to coat evenly.   Shake off any excess sugar and return to baking rack, or onto a sheet of foil, to finish drying, 1 hour.
